What is Quercetin?
Quercetin is an ubiquitous antioxidant plant compound found in high concentration, for example in onions, elderberries, capers, apples and blueberries. Quercetin is not only one of the most frequently studied flavonoids, but together with kaempferol is also the most commonly occurring flavonoid in plant-based foods.
Quercetin exists in several chemical forms in plants. One well-known compound is the flavonol rutin, which is composed of quercetin and the sugar rutinose.
| Food | Quercetin Content (mg per 100g) |
| Capers | 234 mg |
| Onions (raw) | 30-50 mg |
| Kale | 23 mg |
| Apples | 4-6 mg |
| Blueberries | 3-5 mg |
| Broccoli | 3 mg |
| Cherries | 2-5 mg |

The Benefits of Quercetin
Quercetin belongs to the group of flavonoids and is valued for its antioxidant properties (Xu et al., 2019). Antioxidants help protect cells from the daily damage caused by oxidative stress, which plays a role in the development of diseases of civilisation (Kıran et al., 2023). Quercetin is considered one of the most important antioxidants in fruit and vegetables.
Quercetin is also being researched in connection with allergies. There is evidence that it can influence the release of histamine from mast cells, which may support a balanced reaction to allergens – such as in hay fever – and could play a role in the context of histamine intolerance (Yamada et al., 2022, Weng et al., 2012).
Clinical studies suggest that quercetin could also be useful for various complaints, such as for rheumatoid arthritis or in certain situations related to viral burden (Javadi et al., 2017, Pierro et al., 2023).
